1932

Hiram's opens on Palisade Avenue in Fort Lee — one counter, one grill, and a hot dog recipe that hasn't needed to change since.

1955

Ownership passes down, and the next generation keeps the stand running exactly as the regulars remember it.

2002

Pete Demiris and Jeff Escudero — both longtime employees — take over the business, carrying forward the same recipes and the same roadside feel.

2015

Anthony Bourdain features Hiram's on the New Jersey episode of Parts Unknown, returning to a place he'd loved since childhood.

"This is my happy place."

2019

Hiram's hosts the launch of New Jersey's official Anthony Bourdain Food Trail — stop number one on a ten-restaurant tribute to his home state.

Today

Same counter, same grill, same recipe — Pete and Jeff are still serving rippers on Palisade Avenue, proof that 93 years in, Hiram's has never needed to become something else to stay legendary.
